  1. I think a roasted chicken risotto would be so tasty. Terrific menu plan for this week.

  2. For as much cooking as I do, I've never made a roasted chicken. So this will be a first. I always use boneless, skinless chicken breasts, because right now it's just the two of us.

  3. Roast chicken leftovers torn into small pieces mixed with a little italian dressing is great for soft tacos.

  4. That sounds good, knowing Paul I won't have much for leftovers... :) Whenever I make turkey he never wants me to do anything with it, he could just eat that for dinner every night as is

  5. Oh yummy! How about you come over Wednesday and I'll come over Tuesday? I like to roast my chicken beer can style. That's where you take a can of beer, or soda, pop it open and pour a little out, then set the butt of the chicken over it and roast it vertical. The beer/soda keeps the chicken moist and all the grease ends up in the pan you set the can and chicken.
